Stuffed & Baked Lady Apples (paleo stuffed apples)

I have been checking out these Lady Apples at Whole Foods for the past couple of years. I generally throw a batch in the basket so we can just eat these cute little things. This year I decided to stuff and bake them. This is my version of paleo stuffed apples.

These paleo stuffed apples are especially good with either of these two ice creams:
Pumpkin Ice Cream
Cinnamon Ice Cream

Stuffed & Baked Lady Apples (paleo stuffed apples)

Ingredients

  • • 3 tablespoons ghee or organic butter, softened
  • • 2 tablespoons organic pumpkin puree
  • • 1 teaspoon cinnamon
  • • pinch of sea salt
  • • 1/4 cup chopped pecans
  • • 2 tablespoon unsweetened coconut flakes
  • • 2 tablespoons pure maple syrup
  • • 12 lady apples (similar to crab apples)
  • • 12 6-inch aluminum foil squares

Directions

  1. Preheat oven to 350 degrees F.
  2. In a bowl, mix ghee, pumpkin, cinnamon, salt, pecans, coconut flakes, and maple syrup.
  3. Core apples.
  4. In a muffin tin, place a piece of foil. Put a cored apple in the center and overfill the center cored area with mxture. Bring edges of foil together on top of apple to seal. Repeat 12 times.
  5. Cook for 20 minutes.
  6. Remove from oven and let rest for 30 minutes. Unwrap.
  7. Enjoy!
