Crab and Bacon Baked Fritters (paleo)

These savory little bites are great with a salad, soup, or just poppin’ them in your mouth as a snack!

Crab and Bacon Baked Fritters (paleo)

Ingredients

  • • 3 large eggs
  • • 1/2 pound of bacon, cooked and crumbled
  • • 1 pound lump crabmeat
  • • 1/2 cup chopped leeks
  • • 1/2 cup grated apples
  • • 1/4 cup coconut flour or cassava flour
  • • 1 tablespoon Dijon mustard
  • • 1 teaspoon horseradish, grated or prepared
  • • 1 teaspoon dill, dried or fresh
  • • salt and pepper, to taste

Directions

  1. Preheat oven to 400 degrees F.
  2. Whisk the eggs. Add remaining ingredients and blend.
  3. Spoon into a greased mini muffin pan.  This recipe yields 24 "fritters", so overfill the sections with a rounded top.
  4. Bake for 20 minutes.
  5. Enjoy!
