1. To make Coleslaw: In a medium bowl, combine all ingredients. Refrigerate covered until ready to use.
2. To make Jackfruit Wraps: Preheat air fryer at 375°F for 3 minutes.
3. Toss 1⁄3 cup barbecue sauce with jackfruit in a medium bowl.
4. Place jackfruit in air fryer basket lightly greased with olive oil and cook 5 minutes. Shake basket. Cook an additional 5 minutes.
5. Transfer jackfruit to a medium bowl. Add remaining sauce. Using two forks, pull apart jackfruit until it resembles pulled pork.
6. Serve jackfruit on lettuce leaves topped with coleslaw.
7. Enjoy!

  • 1 cup prepackaged coleslaw mix
  • 1⁄4 cup vegan mayonnaise (or preferred mayo)
  • 2 teaspoons granular erythritol
  • 1⁄2 teaspoon apple cider vinegar
  • 1⁄4 teaspoon salt
  • 1⁄4 teaspoon freshly ground black pepper
  • For Jackfruit Wraps:
  • 1 (20-ounce) can green jackfruit in brine, drained and diced
  • 2⁄3 cup sugar-free barbecue sauce, divided
  • 6 large leaves iceberg lettuce
