Baked Cubano Egg Rolls

When JSL Foods, the producer of Twin Dragon Asian Wrappers, put out a call for recipes using their product, I was all over it! Twin Dragon Asian Wrappers are Vegan and Non-GMO. Plus, they are manufactured with no artificial preservatives.

I immediately thought of one of my favorite sandwiches…the Cubano. The play of pork, ham, mustard, and dill pickles are a party in your mouth. But, with carb-conscious folks (like myself), I usually don’t indulge in big sandwiches. Enter the humble, yet delicious, egg roll wrapper. It dramatically cuts back on the breading, yet all of your favorite flavors are still combined leaving your taste buds dancing!

With the Super Bowl right around the corner in an era of social distancing, double-dipping is especially a huge no-no these days. These crispy egg rolls are the perfect solution for a delicious, self-contained appetizer.

Ingredients

  • • 6 cups cooked pulled pork
  • • 3 ounces cream cheese, softened
  • • 2 tablespoons yellow mustard
  • 16 Twin Dragon Egg Roll Wrappers
  • • 8 slices deli ham, halved
  • • 1 1/2 cups shredded Swiss cheese
  • • 1/2 cup dill relish

Directions

1. Preheat oven to 425* F.
2. In a large bowl, combine pulled pork, cream cheese, and yellow mustard until well-combined.
3. Place a Twin Dragon Egg Roll Wrapper on a work surface positioned like a diamond. Spoon a line of 3 tablespoons of pork mixture across the middle of the egg roll wrapper. Add 1.5 tablespoons cheese, a half-slice of deli ham, and a heaping teaspoon of dill relish. Fold bottom corner up over filling. Fold in side corners. Gently, tightly roll toward the top corner.
4. Place egg roll, seam-side down, on a parchment paper-lined baking sheet. Repeat until 16 egg rolls are formed.
5. Bake for 10 minutes until wrappers are browned and crisp.
6. Let cool and enjoy!
