Prosciutto e Melone (and Mango!!)

Ahhhh…this brings back great memories…as food should!  Growing up a Navy Brat, we moved every few years (or months sometimes!).  One of the best adventures was living in Naples, Italy.  Italians knew how to socialize around food ~ fantastic food, that is.  The first time someone served me prosciutto wrapped around a honeydew melon slice, I thought they had lost their mind, but hell, calamari turned out to be yummy, so why not try this?!

Fantastic!!  The saltiness and smokiness of the prosciutto wrapped around this sweet melon is a win.  Now, for the mango…my dad did this a few weeks ago.  He gave me a call and said that he had discovered his newest favorite snack.  I still prefer the melon (I like cantaloupe over honeydew, although both are delicious), but I have to say that the mango gives a slightly different flavor profile…I feel like an Italian on vacation in the Bahamas!

Variation:  For an appetizer, ball the melons and wrap smaller strips of prosciutto around them.  Skewer with a toothpick and watch them disappear as your guests wipe them out quickly!
