Lamb Sliders with Quick Red Onion Jam

These lamb sliders are full of traditional flavors including a quick red onion jam, a big slice of a beefsteak tomato, along with an optional tzatziki sauce, assuming your diet allows for dairy.

I use this slider press to help with the equal distribution of the ground lamb.

Ingredients

  • • OPTIONAL TZATZIKI SAUCE:
  • • 1 cup plain Greek yogurt
  • • 2 tablespoons fresh dill, chopped
  • • 3-4 garlic cloves, minced
  • • 1 tablespoon fresh lime juice
  • • 1/2 cup diced English cucumbers
  • • 1/2 teaspoon salt
  • • 1/4 teaspoon ground black pepper
  • • LAMB SLIDERS:
  • • 1 pound ground lamb
  • • 2 tablespoons fresh mint, chopped
  • • 2 teaspoons fresh dill, chopped
  • • 1/4 teaspoon ground coriander
  • • 1/4 teaspoon ground cumin
  • • 1/4 teaspoon salt
  • • 1/8 teaspoon cayenne pepper
  • • Pinch ground nutmeg
  • • 2-3 garlic cloves, minced
  • • RED ONION JAM:
  • • 1 medium red onion
  • • 2 teaspoons avocado oil (or favorite cooking oil)
  • • 2 tablespoons balsamic vinegar
  • • 2 teaspoons honey
  • • salt and ground pepper
  • • EXTRAS:
  • • 2 beefsteak tomatoes
  • • 1 tablespoon chopped fresh mint

Directions

1. Combine (optional) tzatziki sauce ingredients. Refrigerate covered until ready to use.
2. Combine slider ingredients. Use your hands to massage all of the ingredients to distribute evenly. Divide into 10 slider patties. Place on a platter and set aside.
3. Cut the red onion in half and thinly slice onion into half-moons. Place oil in a skillet over medium-high heat. Add onions. Toss. Cook for 10 minutes, occasionally tossing. Add balsamic vinegar and honey and stir. Cook until mixture becomes sticky. Add a dash of salt and ground pepper. Remove from heat and transfer to a bowl.
4. Add another drizzle of oil to skillet. Add sliders. Cook for 3-4 minutes per side until the internal temperature is 140 degrees F. Set sliders aside for 5 minutes (they will continue to cook to reach 145 degrees F).
5. Slice tomatoes into 10 equal slices. Plate tomatoes. Season with salt and pepper. Add slider to each tomato. Top with onion jam. Garnish with chopped fresh mint.
