I love ~ love oysters: fried, steamed and raw! This is my “paleo” version of fried oysters to enjoy this love of my life!
8 oz raw oysters
1 tablespoon bacon grease
1/2 cup almond meal
2 tsp Old Bay Seasoning
pinch of sea salt
1/4 tsp ground pepper
In a small bowl, whisk eggs.
In a second bowl, blend almond meal, Old Bay, salt and pepper.
Heat bacon grease in a pan on medium-high heat stovetop.
Dip oysters in the egg wash and then cover in the almond meal blend.
Place in the pan for 2-3 minutes. Flip and cook for an additional 2-3 minutes (depending on the thickness of the oysters).
Serve with cocktail sauce.
