Chocolate Hazelnut Brownie Cookies (paleo/gluten-free/grain-free)

BrowniePlainJar_1024x1024THANK YOU Nikki’s Coconut Butter ~ my daughter said that these Chocolate Hazelnut Brownie Cookies were the best cookies yet and it is all due to your insanely yummy coconut butter flavors! You can eat this coconut right out of the jar (you probably shouldn’t…but you could!).

I have tried Chocolate Hazelnut Brownie, Pistachio Macaroon, and Vanilla Cake Batter…Honey Pecan Pie is next on my list!

Chocolate Hazelnut Brownie Cookies

Ingredients

  • • 4 egg whites
  • • 1/4 cup Chocolate Hazelnut Brownie Coconut Butter
  • • 1 teaspoon vanilla
  • • 1/3 cup coconut flour
  • • 2 tablespoons raw honey
  • • pinch of sea salt
  • • 1/4 teaspoon cinnamon
  • • 1/4 cup unsweetened cocoa powder
  • • 1/4 cup chopped hazelnuts
  • • 2 ounces 72% dark chocolate

Directions

  1. Preheat oven to 350 degrees F.
  2. Beat egg whites until stiff peaks form.  Blend in coconut butter, vanilla, coconut flour, honey, salt, cinnamon, and cocoa powder.
  3. Add hazelnuts.  Scoop 2 teaspoons of the batter at a time onto a parchment paper-lined cookie sheet.
  4. Cook for 10 minutes.
  5. Let stand for 30 minutes.  Using a double boiler (or a metal bowl atop a saucepan), melt the chocolate.  Drizzle over the cookies.
  6. Enjoy!
