Spicy Dill Refrigerator Pickles (paleo/gluten-free)

This Spicy Dill Refrigerator Pickles were at the request of one of my favortie followers, Megan Larson, Wellness Coach.  She went out to eat and ate some spicy pickles with her burger.  This recipe is for refrigerator pickles that only last up to 2 weeks.  Also, feel free to alter the “spice level”.  I added a jalapeno, but I seeded it, so this is a mildly spicy recipe.  If you want some more kick, keep a few of the seeds in the marinade!  Also, feel free to experiment with the vinegar and use what you have in your pantry!

If you have a basket of cucumbers but don’t want to take time boiling mason jars and canning all day, these refrigerator pickles are your friend. This recipe is super-easy and just as yummy as store-bought with the added benefit of knowing exactly what you put in the jar!

Spicy Dill Refrigerator Pickles

 

Ingredients

  • • 3 small cucumbers, thinly sliced
  • • 1 cup white wine vinegar
  • • 1 cup red wine vinegar
  • • 1 jalepeno, seeded and sliced
  • • 1.5 tablepsoons dill
  • • 2 cups water
  • • 2 teaspoons whole peppercorns
  • • 2 teaspoons ground coriander
  • • 1/4 cup raw honey
  • • 1 teaspoon Sriracha (or hot sauce/chili paste of choice)

Directions

  1. Combine all of the ingredients in a covered dish or jar(s).  Let "marinate" for at least 24 hours.
  2. Eat alone...with bun-less burgers...with a side of steak...on salads...
  3. Enjoy!
