Lemon Poppy Seed Cookies

This idea came from a request from one of Cavegirl Cuisine’s Twitter followers…and I’m so glad it did!  The original request was actually for a lemon poppy seed loaf, but I thought this variation would be more fun (and easier)!!

Ingredients

  • • 3 tablespoons fresh lemon juice
  • • 3 teaspoons lemon zest
  • • 1 tablespoon poppy seeds, plus extra for sprinkling
  • • 1/3 cup raw honey
  • • 1/2 cup creamy almond butter
  • • 1/2 cup coconut flour
  • • 1 egg
  • • 1 teaspoon baking powder

Directions

  1. Preheat oven to 350 degrees.
  2. Line a cookie sheet with parchment paper.
  3. In a bowl, blend all ingredients until smooth.
  4. Spoon tablespoons of batter about 1/2 inch apart (these cookies don't spread when cooking).  Sprinkle with more poppy seeds as desired.
  5. Bake for 10 minutes.  Let rest for at least 30 minutes.
  6. Enjoy!
