Instant Pot Broccoli-Gruyere Soup

Using Gruyere cheese in this soup that is traditionally made with Cheddar makes you feel like a “grownup” by taking a sophisticated twist! If you need a cheese substitute, try Emmental, Jarlsberg, Beaufort, or even Swiss.

Ingredients

  • • Pantry Staples: chicken both, salt, ground black pepper
  • • 1 large bunch broccoli, coarsely chopped
  • • 1 medium sweet onion, peeled and chopped
  • • 4 cups chicken broth
  • • 1 teaspoon salt
  • • 1⁄2 teaspoon ground black pepper
  • • 1⁄8 teaspoon ground nutmeg
  • • 1⁄2 cup heavy cream
  • • 1 cup shredded sharp Gruyere cheese

Directions

1. In the Instant Pot®, add broccoli, onion, broth, salt, pepper, and nutmeg. Lock lid.
2. Press the Manual or Pressure Cook button and adjust time to 15 minutes. When timer beeps, quick-release pressure until float valve drops. Unlock lid.
3. Add cream and cheese. In the Instant Pot®, puree the soup with an immersion blender, or use a stand blender and puree in batches until desired consistency is reached.
4. Ladle soup into bowls. Serve warm.
