Endive Tacos

I saw endive at Trader Joe’s last week and in an effort to try a variety of different produce, I decided to buy some.  I still had some enchilada sauce that I needed to use, so I decided to give endive tacos a try…why not!  These were a hit with my family and I was really surprised that my girls didn’t even mention the fact that there was no cheese.  Shhhh…if they don’t mention it, then I’m just moving forward!

Belgian endive…about 30 boats

Beef Mixture:
1 lb ground beef
5 oz enchilada sauce

Salsa:
1/2 avocado, chopped into small cubes
2 garlic cloves, minced
1 large roma tomato, chopped into small cubes
1/4 red onion, finely chopped
2T cilantro, plus extra for garnish
juice of 1 lime
1/4 tsp sea salt

Cook meat on medium-high heat until pink is gone.  Drain excess grease.  Pour the enchilada sauce in the pan and cook down to desired meat sauce thickness.

Mix salsa ingredients together.

Place a small amount of the meat mixture in an endive boat.  Place an equal amount of the salsa.  Garnish with cilantro if desired.

Variation:  If the filling of the endive is driving you crazy, then just make a big taco salad with the ingredients and Enjoy!  🙂
