Crab-Stuffed Yellowtail Snapper (Whole Fish)
I’ve been seeing whole snappers on ice for the past six months at Whole Foods and I finally decided to buy one and give baking the whole thing a shot. It was easier than I thought, especially after the fishmonger scaled and gutted the fish for me…for FREE! 🙂
1, 2-lb yellow tail snapper
1/2 cup crab meat
1/8 cup onion, finely chopped
juice of 1/2 lime
1/4 tsp paprika
1/2 lime, sliced
Pre-heat oven to 300 degrees.
In a bowl, mix the crabmeat, pesto, onion, lime juice and paprika.
Place fish on an aluminum foil lined cookie sheet.
Stuff the fish. Place the lime slices on top of the fish.
Bake for approximately 40 minutes.
