O'Cavegirl's Corned Beef & Cabbage (Crock Pot)

I originally made this Corned Beef & Cabbage for St. Paddy’s years ago and never took pics but because it was so well-received, I bought another uncured corned beef round from Trader Joe’s and finally took a pic…it’s not a beauty, but it IS tasty! This is such an amazingly easy meal…my husband even asked me, “How did you cook cabbage that I actually enjoyed??”…I have no idea…this was truly a no-brainer recipe!

Ingredients

  • • 2-pound uncured seasoned corned beef round (mine was from Trader Joe's)
  • • 1 yellow onion, large chopped
  • • 1 large head of cabbage, roughly chopped
  • • 2 cups beef broth
  • • 4-6 cloves of garlic, roughly smashed
  • • 2 teaspoon sea salt
  • • 1 teaspoon ground pepper

Directions

  1. Place all ingredients in a crock pot. Add water until liquid is above the beef. Cover.
  2. Cook on low for 5-6 hours.
  3. Enjoy!
