Banana Bread Bombs (paleo and gluten-free)

I started out with two really ripe bananas that I needed to use, so I threw together some ingredients in hopes of some nutty banana cookies; however, these came out tasting just like little cakey bites of banana bread!! 🙂

Banana Bread Bombs

Ingredients

  • • 2 large eggs
  • • 2 small ripe bananas
  • • 1 teaspoon baking powder
  • • 1/4 cup unsweetened coconut flakes
  • • 1/4 cup coconut flour
  • • 2 tablespoons raw sunflower seeds
  • • 1/4 cup chopped walnuts
  • • 1 teaspoon vanilla
  • • 2 tablespoons raw honey
  • • 1/4 teaspoon fine sea salt
  • • pinch of cinnamon

Directions

  1. Preheat oven to 350 degrees.
  2. Whisk eggs. Stir in  remaining ingredients until blended.
  3. Place small scoops of batter (about 2 teaspoons each) on a parchment paper-lined cookie sheet (or silicone baking mat). The balls should be tightly packed to avoid spreading. Bake for 15 minutes.
  4. Remove from the oven and let rest for 30 minutes. (Optional garnish: drizzle a little dark chocolate ~ you can never go wrong with that!).
  5. Enjoy!
