Baked Rabbit

I picked up some rabbit at our Farmer’s Market last weekend. Not only have I never cooked rabbit, I’ve never eaten it. Although there are a lot of wonderful recipes out there, I wanted my first time to be gentle (smile), so I decided to simply bake it to get an idea of the flavor and see what I was working with. I suppose it kind of tastes like chicken but with a deeper flavor and it was very moist like the dark meat of chicken or turkey.

1 lb rabbit
1 navel orange
2T macadamia nut oil
1T ground celery seed
sea salt
ground black pepper
1/2 cup water

Pre-heat oven to 300 degrees.

Place rabbit in a Dutch Oven or baking dish. Massage oil into rabbit. Season liberally with salt, pepper and ground celery seed.

Cut the orange in half and squeeze over the rabbit. Pour water in the bottom of the baking dish.

Take a piece of aluminum foil and make a tent over your baking dish.

Cook for approximately 90 minutes. Let rest for 10 minutes.

I served mine over a bed of arugula drizzled with olive oil and balsamic vinegar…with cut Romas around the perimeter of the plate. I placed the cooked rabbit on top of the arugula and served it “family-style”.
