Saffron Herbed Cauliflower Rice in the Instant Pot® Duo Mini

Anything little or mini is just cuter! But, the 3-quart Instant Pot® Duo Mini also has great functionality. It is an idea mate to your regular sized IP and can aid in making side dishes or desserts while your big guy is doing the meal preparations. It is also great for singles, college students, and folks with minimal counter space. And, did I mention that it’s cute?!

The Saffron Herbed Cauliflower Rice comes from my upcoming book, The “I Love My Instant Pot” Paleo Recipe Book. Although, in the book I used parsley and basil. In the following recipe, I subbed those herbs for cilantro and mint. Both are great, it just depends on your taste buds mood!

Ingredients

  • • 1 cup water
  • • 1 medium head of cauliflower, cut into florets
  • • 1 tablespoon ghee
  • • 2 cloves of garlic, minced
  • • 1/2 teaspoon saffron threads
  • • 2 tablespoons chopped mint
  • • 2 tablespoons chopped cilantro
  • • 1 teaspoon sea salt
  • • Grind of fresh black pepper
  • • 1 teaspoon lemon juice
  • • 1/2 teaspoon lemon zest

Directions

1. Add water to the Instant Pot® and insert steamer basket. Add cauliflower. Lock lid. Press the Steam button and adjust time for 2 minutes. When timer beeps, quick-release pressure until float valve drops and then unlock lid.
2. Transfer cauliflower to a serving bowl and discard liquid from pot.
3. Press the Sauté button on the Instant Pot® and heat ghee. Add cauliflower. Use a potato masher to smash cauliflower in the pot until it has a rice-like consistency.
4. Add garlic and saffron and stir. Transfer “rice” to a serving bowl. Toss in remaining ingredients. Serve warm.
5. Enjoy!
